  • 12 oz spaghetti
  • 8 oz fresh cremini or button mushrooms, sliced
  • 4 cloves fresh garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot and cook spaghetti according to package instructions until al dente (about 8-10 minutes).
  2. While pasta cooks, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add sliced mushrooms to the skillet; cook until golden brown (about 5 minutes). Season with salt and pepper.
  4. Reserve 1/2 cup of pasta water, then drain the spaghetti.
  5. Combine drained spaghetti with the mushroom mixture in the skillet. Gradually add reserved pasta water until desired creaminess is achieved.
  6. Serve hot topped with Parmesan cheese and chopped parsley.
