Ingredients

  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup powdered sugar, sifted
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1 cup whipped cream (homemade or store-bought)

Instructions

  1. In a mixing bowl, combine graham cracker crumbs and melted butter until mixed. Press firmly into the bottom of serving cups.
  2. In another bowl, beat softened cream cheese and sour cream until smooth. Gradually add powdered sugar and vanilla extract while mixing until creamy.
  3. Gently fold in chopped strawberries into the cream cheese mixture.
  4. Layer the filling over the crust in each cup, adding more strawberry slices on top before adding another layer of cheesecake mixture.
  5. Cover with plastic wrap and refrigerate for at least 3 hours or overnight.
  6. Before serving, dollop whipped cream on top and garnish with additional strawberry slices.
