  • 1 tbsp Cajun seasoning
  • 1 medium onion, diced
  • 1 cup bell peppers, chopped (mixed colors)
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 2 cups short pasta (penne or rotini)
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. Brown the ground beef in a large pot over medium-high heat until no pink remains. Drain excess fat if necessary.
  2. Add the diced onion and bell peppers along with minced garlic. Sauté until onions are translucent.
  3. Stir in Cajun seasoning and cook for another two minutes until fragrant.
  4. Pour in the beef broth and bring it to a gentle simmer.
  5. Add the short pasta, stir well, and cover to cook until al dente (approximately 8-10 minutes).
