  • 1 cup freshly grated Parmesan cheese
  • 4 tbsp extra virgin olive oil
  • 4 garlic cloves, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • Fresh herbs (parsley or chives), for garnish (optional)

Instructions

  1. Boil the Yukon Gold potatoes in salted water until fork-tender (15-20 minutes). Drain and let them dry.
  2. Preheat the oven to 425°F (220°C).
  3. On a baking sheet lined with parchment paper, gently smash each potato until flattened but still intact.
  4. Drizzle the smashed potatoes with olive oil and sprinkle with salt, pepper, and minced garlic.
  5. Bake for 25-30 minutes until golden brown and crispy.
  6. Remove from the oven, sprinkle with Parmesan cheese, and return to bake for an additional 5 minutes until bubbly.
