  1. A day before, separate egg whites and age them in the fridge.
  2. Sift almond flour and powdered sugar together twice to ensure a smooth mix.
  3. In a clean bowl, whip egg whites until frothy, gradually adding granulated sugar until stiff peaks form.
  4. Gently fold in food coloring until desired shade is achieved.
  5. Carefully mix dry ingredients into the egg whites until the batter flows like lava.
  6. Pipe small circles onto parchment-lined baking sheets and let rest for 30-60 minutes.
  7. Preheat oven to 300°F (150°C) and bake for 15-20 minutes until firm but not browned.
