  • 4 cups fresh peaches, chopped (about 4 large peaches)
  • 1 medium yellow onion, finely diced
  • 1 cup brown sugar
  • 1/2 cup cider vinegar
  • 2 tsp fresh ginger, grated
  • 1/2 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp allspice
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: chop peaches and dice onions.
  2. In a medium saucepan over medium heat, sauté onions in olive oil until translucent (about 5 minutes).
  3. Add peaches and brown sugar; stir until combined (3-4 minutes).
  4. Pour in cider vinegar and add ginger and spices; stir continuously for about 5 minutes.
  5. Reduce heat to low and simmer uncovered for 20-25 minutes until thickened, stirring occasionally.
  6. Remove from heat, cool, then transfer to sterilized jars. Store in the fridge for up to two weeks.
