  • 2 tablespoons unsalted butter (for topping)
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter (for batter)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 2 large eggs (room temperature)
  • 1/2 cup whole milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin.
  2. In a skillet, melt 2 tablespoons of butter over medium heat. Add sliced peaches and cook with brown sugar until slightly caramelized, about 5 minutes.
