  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh basil pesto (homemade or store-bought)
  • 8 large romaine lettuce leaves
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • ½ cup feta cheese, crumbled (optional)
  • 2 tsp olive oil

Instructions

  1. Preheat your grill or skillet over medium heat. Season chicken breasts with salt and pepper and drizzle with olive oil.
  2. Cook the chicken for 6-7 minutes per side until golden brown and juices run clear. Remove from heat and let rest for 5 minutes.
  3. Shred the cooked chicken using two forks. In a mixing bowl, combine shredded chicken with basil pesto until evenly coated.
  4. Take a romaine leaf and spoon in some pesto chicken mixture. Add halved cherry tomatoes and cucumber slices on top. If desired, sprinkle with feta cheese.
  5. Serve immediately while fresh and enjoy!
