- 1 cup full-fat coconut milk
- 1 cup 100% pure pineapple juice
- ½ cup sweetened condensed milk
- 1 cup fresh pineapple chunks (or frozen)
- 2 tbsp rum (optional)
Instructions
- In a blender, combine coconut milk, pineapple juice, sweetened condensed milk, and fresh pineapple chunks. Blend until smooth.
- If desired, add rum and blend again until fully incorporated.
- Pour the mixture into popsicle molds, filling them three-quarters full.
- Insert sticks and freeze for at least 4 hours or overnight.
- To unmold, run warm water over the outside of the molds for easy release.
