Ingredients

  • 1 cup full-fat coconut milk
  • 1 cup 100% pure pineapple juice
  • ½ cup sweetened condensed milk
  • 1 cup fresh pineapple chunks (or frozen)
  • 2 tbsp rum (optional)

Instructions

  1. In a blender, combine coconut milk, pineapple juice, sweetened condensed milk, and fresh pineapple chunks. Blend until smooth.
  2. If desired, add rum and blend again until fully incorporated.
  3. Pour the mixture into popsicle molds, filling them three-quarters full.
  4. Insert sticks and freeze for at least 4 hours or overnight.
  5. To unmold, run warm water over the outside of the molds for easy release.
