  • 2 cups all-purpose flour
  • 3/4 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 large eggs
  • 8 oz cream cheese (softened)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, mix flour, baking soda, cinnamon, nutmeg, and salt. In another bowl, blend pumpkin puree, brown sugar, granulated sugar, eggs, and vanilla until smooth. Gradually combine dry ingredients into wet.
  3. For the cream cheese filling, beat softened cream cheese with sugar and egg yolk until creamy.
  4. Drop cookie dough onto prepared sheets. Create an indentation in each cookie and fill with cream cheese mixture.
  5. Bake for 12-15 minutes until edges are set but centers remain soft. Cool on sheets for five minutes before transferring to wire racks.
