  • 1 can (15 oz) white beans, drained
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ cup breadcrumbs (panko recommended)
  • ¼ cup fresh parsley, chopped
  • 2 tbsp olive oil (plus more for cooking)

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine quinoa and 2 cups water; bring to a boil, then simmer for about 15 minutes until fluffy.
  2. In a skillet over medium heat, add olive oil and sauté onion until translucent; add minced garlic and cook for an additional 30 seconds.
  3. In a large bowl, mash the drained white beans with a fork until smooth. Mix in cooked quinoa, sautéed onion and garlic, cumin, smoked paprika, and salt to taste.
  4. Fold in breadcrumbs and parsley until well combined, then shape into six burger patties.
  5. Heat olive oil in the skillet over medium-high heat; cook each patty for about 4-5 minutes on each side until golden brown and crispy.
  6. For extra crispness, transfer cooked patties to a baking sheet and bake at 375°F (190°C) for another 10 minutes or grill if desired.
