- 2 tbsp olive oil (plus more for cooking)
Instructions
- Rinse quinoa under cold water. In a saucepan, combine quinoa and 2 cups water; bring to a boil, then simmer for about 15 minutes until fluffy.
- In a skillet over medium heat, add olive oil and sauté onion until translucent; add minced garlic and cook for an additional 30 seconds.
- In a large bowl, mash the drained white beans with a fork until smooth. Mix in cooked quinoa, sautéed onion and garlic, cumin, smoked paprika, and salt to taste.
- Fold in breadcrumbs and parsley until well combined, then shape into six burger patties.
- Heat olive oil in the skillet over medium-high heat; cook each patty for about 4-5 minutes on each side until golden brown and crispy.
- For extra crispness, transfer cooked patties to a baking sheet and bake at 375°F (190°C) for another 10 minutes or grill if desired.
