  • 4 boneless pork cutlets (about 1/2 inch thick)
  • 1 cup all-purpose flour
  • 2 large eggs (lightly beaten)
  • 1 cup seasoned breadcrumbs
  • 8 oz fresh cremini mushrooms (sliced)
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tbsp fresh parsley (chopped)
  • Salt and pepper to taste
  • Cooking oil for frying

Instructions

  1. Pound the pork cutlets between plastic wrap until about 1/2 inch thick.
  2. Set up three shallow dishes: one with flour mixed with salt and pepper, one with beaten eggs, and one with breadcrumbs. Dredge each cutlet in flour, then dip in eggs, and coat with breadcrumbs.
  3. Heat oil in a skillet over medium heat. Fry each cutlet for 4-5 minutes on each side until golden brown and cooked through.
