  • 1 tsp cayenne pepper (adjust to taste)
  • 2 bay leaves
  • 1 cup long-grain white rice
  • 4 cups low-sodium vegetable broth or water

Instructions

  1. Soak dried beans overnight for better texture (if using).
  2. In a large pot over medium heat, sauté olive oil with onions, bell pepper, and celery until soft.
  3. Add minced garlic and cayenne pepper; cook for about 30 seconds until fragrant.
  4. Stir in sliced Andouille sausage and rinsed red beans; combine well.
