  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp coriander
  • 1 can (14 oz) coconut milk
  • 4 cups low-sodium vegetable broth
  • 2 cups spinach or kale, chopped

Instructions

  1. Heat oil in a large pot over medium heat. Sauté chopped onions until golden brown (about 5 minutes).
  2. Stir in minced garlic and grated ginger; cook for another minute.
  3. Add cumin, turmeric, and coriander; toast for 30 seconds until fragrant.
  4. Mix in red lentils and vegetable broth; stir well.
  5. Bring to a boil, then reduce heat and let simmer uncovered for about 20 minutes or until lentils are soft.
  6. In the last five minutes of cooking, slowly pour in coconut milk and stir well.
  7. Add chopped spinach or kale and allow them to wilt before serving.
