Description

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 1 cup fresh strawberries, pureed
  • 1 cup fresh blueberries, pureed
  • 3 large eggs

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a baking dish.
  2. In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press into the bottom of the baking dish.
  3. In another bowl, beat cream cheese until fluffy. Add sour cream and vanilla; mix until smooth. Gradually blend in remaining sugar and eggs.
  4. Fold pureed strawberries and blueberries into one-third of the batter for swirls.
  5. Pour half of the plain batter over the crust, dollop berry batter on top, then add more plain batter. Swirl gently with a knife.
  6. Bake for 40-45 minutes until set at edges but slightly jiggly in the center. Cool completely before refrigerating for at least four hours.
