Ingredients

  • 2 medium-sized beets (approximately 300g)
  • 1/4 cup tahini (60g)
  • 1 clove garlic, minced
  • 2 tbsp freshly squeezed lemon juice (30ml)
  • 2 tbsp extra virgin olive oil (30ml), plus more for drizzling
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap the whole beets in aluminum foil and roast for 45-60 minutes until tender.
  2. Allow the roasted beets to cool for 10-15 minutes, then peel under running water while wearing gloves.
  3. In a food processor, combine peeled beets, tahini, garlic, lemon juice, olive oil, salt, and pepper. Blend until smooth.
  4. Taste the hummus and adjust seasoning if necessary.
  5. Transfer the hummus to a serving bowl. Drizzle with olive oil and garnish with sesame seeds or herbs before serving.
