  • 2 medium sweet potatoes (about 2 cups, cubed)
  • 1 bell pepper (any color, sliced)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 3 tbsp honey
  • 2 tbsp low-sodium soy sauce
  • 1 tsp dried thyme or oregano
  • Salt and pepper to taste

Instructions

  4. Arrange the vegetables and sausages on a sheet pan, ensuring they are in a single layer.
  5. In a small bowl, mix minced garlic, honey, and soy sauce; drizzle over sausage and veggies.
  6. Roast in the oven for 25-30 minutes, tossing halfway through until everything is golden brown.
