- 2 lbs boneless chicken thighs
- 4 green onions, chopped
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp jerk seasoning
- Juice of 2 limes (about 4 tbsp)
- 2 tbsp brown sugar
- 3 tbsp low-sodium soy sauce
Instructions
- In a blender, combine garlic, ginger, green onions, jerk seasoning, lime juice, and brown sugar. Blend until smooth.
- Place chicken thighs in the slow cooker and pour the marinade over them. Ensure all pieces are well-coated.
- Cover and cook on low for 6 hours or high for 3 hours until the chicken shreds easily with a fork.
- Once done, shred the chicken right in the pot and stir to coat with sauce before serving.
