Ingredients

  • 2 lbs boneless chicken thighs
  • 4 green onions, chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp jerk seasoning
  • Juice of 2 limes (about 4 tbsp)
  • 2 tbsp brown sugar
  • 3 tbsp low-sodium soy sauce

Instructions

  1. In a blender, combine garlic, ginger, green onions, jerk seasoning, lime juice, and brown sugar. Blend until smooth.
  2. Place chicken thighs in the slow cooker and pour the marinade over them. Ensure all pieces are well-coated.
  3. Cover and cook on low for 6 hours or high for 3 hours until the chicken shreds easily with a fork.
  4. Once done, shred the chicken right in the pot and stir to coat with sauce before serving.
