  • 4 bone-in chicken thighs
  • 1 cup oil-packed sun-dried tomatoes, chopped
  • 4 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half)
  • 2 tsp Italian seasoning
  • 1 cup low-sodium chicken broth
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Pat the chicken thighs dry and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the chicken skin-side down until golden brown (about 5 minutes), then transfer to the slow cooker.
  3. In the same skillet, sauté garlic and sun-dried tomatoes until fragrant (about 1 minute). Add chicken broth and heavy cream to deglaze.
  4. Pour the mixture over the chicken in the slow cooker; sprinkle with Italian seasoning and stir gently.
