  • 1 cup low-sodium chicken broth
  • 1 cup shredded sharp cheddar cheese
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. 1. Preheat the oven to 375°F.
  2. 2. Peel and thinly slice the potatoes to about an eighth-inch thick.
  3. 3. Season the pork chops with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the chops for 4 minutes on each side until golden brown. Remove from skillet and set aside.
  4. 4. In the same skillet, sauté onions until translucent (about 3 minutes), then add garlic and cook until fragrant (30 seconds).
