  • 4 cups sliced yellow squash (about 4 medium)
  • 1 cup diced sweet onion
  • 2 large eggs
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup whole milk
  • 1 cup seasoned breadcrumbs
  • 4 tbsp butter, divided
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish with butter.
  2. In a skillet, melt 2 tablespoons of butter over medium heat. Sauté onions and squash until soft (about 10 minutes).
  3. In a bowl, mix sautéed vegetables with eggs, milk, cheese, salt, and pepper until well combined.
  4. Fold in half of the breadcrumbs into the mixture; reserve the rest for topping.
  5. Pour mixture into the baking dish, sprinkle reserved breadcrumbs mixed with remaining melted butter on top.
  6. Bake for 30-35 minutes until golden brown and bubbly.
