  • 46 cloves fresh garlic, minced
  • 4 cups fresh spinach, washed
  • 3 tbsp extra virgin olive oil
  • ¼ cup grated Parmesan cheese
  • ½ tsp red pepper flakes (optional)
  • Salt and freshly cracked black pepper to taste

Instructions

  1. Cook the spaghetti according to package instructions in salted boiling water until al dente (about 8-10 minutes). Drain and reserve some pasta water.
  2. In a large skillet over medium heat, warm the olive oil until shimmering. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Stir in the fresh spinach and cook until wilted and bright green, about 3-4 minutes.
  4. Add the drained spaghetti to the skillet with spinach and garlic. If needed, pour in reserved pasta water for creaminess.
  5. Season with red pepper flakes (if using), salt, and pepper; toss well to combine.
