  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup canned artichoke hearts, drained and chopped
  • 1 cup low-fat cottage cheese
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Chop spinach and artichokes into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium heat. Sear chicken for about 6 minutes on each side until golden brown. Add minced garlic for the last minute.
  3. In a bowl, combine cottage cheese, sour cream, Parmesan cheese, spinach, artichokes, salt, and pepper.
  4. Place seared chicken in a baking dish and spread the spinach-artichoke mixture over the top.
