  • 2 pieces naan bread
  • 2 cups fresh baby spinach (about 60g)
  • 1 cup sliced cremini mushrooms (about 100g)
  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese (about 120g)
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the spinach thoroughly and pat dry. Slice the mushrooms thinly.
  3. In a skillet over medium heat, add olive oil and sauté minced garlic for about one minute.
  4. Add sliced mushrooms and cook until golden brown and tender, about 5 minutes.
  5. Toss in the spinach and cook until wilted, approximately 2 minutes. Season with salt and pepper.
  6. Place naan on a baking sheet lined with parchment paper. Spread sautéed vegetables evenly over each naan.
  7. Generously sprinkle mozzarella cheese on top.
  8. Bake for 10-12 minutes or until the cheese is bubbly and golden.
  9. Allow to cool slightly before slicing into wedges to serve.
