  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup sour cream (full-fat)
  • 3 large eggs (room temperature)
  • 2 tsp vanilla extract
  • 2 cups fresh strawberries, hulled and diced
  • ¼ cup powdered sugar

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar until crumbly. Press into a 9-inch springform pan and bake for 10 minutes.
  3. In another bowl, beat cream cheese with granulated sugar until creamy. Gradually add sour cream, eggs one at a time, and vanilla extract, mixing until smooth.
  4. Blend fresh strawberries with powdered sugar until pureed. Strain if desired.
  5. Pour half the cheesecake filling into the crust; swirl in half the strawberry puree. Repeat with remaining filling and puree.
  6. Bake for 60-70 minutes until set but slightly jiggly in the center. Cool in the oven for an hour before refrigerating overnight.
