  • 1 lb ground lamb or beef
  • 2 lbs starchy potatoes (e.g., Russets)
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 4 tbsp butter
  • 1/2 cup milk
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Boil peeled and chopped potatoes in salted water for about 15-20 minutes until fork-tender.
  3. While potatoes boil, sauté onions and garlic in olive oil over medium heat until translucent (4-5 minutes).
  4. Add ground meat, carrots, and peas; cook until meat is browned.
  5. Stir in chicken broth, thyme, and rosemary; simmer for 10 minutes.
  6. Drain potatoes and mash with butter and milk until creamy but slightly chunky.
  7. In a baking dish, layer the meat mixture first, then spread mashed potatoes on top.
  8. Bake for 20-25 minutes until golden brown.
