- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium yellow onion, thinly sliced

- ¼ cup low-sodium soy sauce
- 2 tbsp rice vinegar (or apple cider vinegar)
- 2 tbsp brown sugar
- 1 tsp toasted sesame oil
Instructions
- Cut chicken into bite-sized pieces. Dice pineapple and slice bell peppers and onions.
- In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, and sesame oil. Set aside.
- Heat oil in a large wok over medium-high heat. Add chicken; stir-fry until golden brown (5-7 minutes).
- Add onions and bell peppers; cook until slightly softened (3-4 minutes).
