- 14 oz firm tofu, pressed and cubed
- 1 can (13.5 oz) full-fat coconut milk
- 2 tbsp green curry paste
- 1 cup bell peppers, sliced
- 1 cup zucchini, sliced
- 1 cup carrots, sliced
- 1 cup snow peas
- 1/4 cup fresh basil leaves
Instructions
- Heat oil in a large pan over medium heat. Add cubed tofu and fry until golden brown on all sides (about 7 minutes). Remove from the pan.
- In the same pan, add bell peppers, zucchini, carrots, and snow peas; sauté for about 5 minutes until slightly softened.
- Stir in green curry paste until vegetables are well-coated.
- Pour in coconut milk and return the tofu to the pan. Stir gently and let simmer on low heat for 10 minutes.
- Tear fresh basil leaves and stir them into the curry just before serving.
