  • 2 lbs beef chuck roast, cut into chunks
  • 3 medium carrots, sliced
  • 4 medium Yukon Gold potatoes, diced
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 cup red wine
  • 2 tsp fresh thyme
  • 2 bay leaves
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Sear the beef chunks until browned on all sides.
  2. Remove the beef and sauté onions in the same pot until translucent. Add minced garlic and cook until fragrant.
  3. Stir in carrots and potatoes; cook for about five minutes.
  4. Return beef to the pot; pour in beef broth and red wine, adding thyme and bay leaves.
  5. Bring to a boil, then reduce heat to low and cover. Simmer for about two hours or until meat is tender.
  6. Taste before serving; adjust seasoning with salt and pepper. Remove bay leaves before serving.
