Instructions

  2. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a bowl, mix flour, sugar, baking powder, cinnamon, and baking soda.
  4. In another bowl, beat eggs with oil and vanilla until frothy.
  5. Fold in grated zucchini into the wet mixture, then gradually add dry ingredients until just combined.
  6. Divide batter between prepared pans and bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  7. For frosting, whip cream cheese until smooth, then mix in powdered sugar and milk to achieve desired consistency.
