Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a bowl, whisk together flour, brown sugar, granulated sugar, baking powder, cinnamon, and salt.
  4. In another bowl, beat the egg with the grated zucchini until well combined.
  5. Gradually mix the wet ingredients into the dry ingredients until just combined; avoid overmixing.
  6. Drop heaping tablespoons of dough onto the prepared baking sheets.
  7. Bake for 12-15 minutes or until edges are golden brown but centers remain soft.
  8. Cool on sheets for a few minutes before transferring to wire racks.
