  • 4 medium zucchinis (spiralized into noodles)
  • 1 cup carrots (julienned)
  • 1 large red bell pepper (sliced)
  • 4 green onions (chopped)
  • ½ cup roasted peanuts (chopped)
  • 2 large eggs
  • For the Sauce:
  • 3 tbsp fish sauce
  • 2 tbsp tamarind paste
  • 2 tbsp brown sugar
  • Juice of 1 lime
  • 1 tsp chili flakes

Instructions

  1. Spiralize the zucchinis into noodles and set aside.
  2. In a bowl, whisk together fish sauce, tamarind paste, brown sugar, lime juice, and chili flakes.
  3. Heat oil in a skillet over medium heat; scramble the eggs until just set and place on a plate.
  4. Sauté carrots and bell pepper in the same skillet for about 3-4 minutes until tender but crisp.
  5. Add zucchini noodles back to the skillet along with scrambled eggs and sauce mixture; toss gently over medium heat for about 2-3 minutes until warmed through.
  6. Garnish with chopped peanuts and green onions before serving hot.
