Instructions
- Spiralize the zucchinis into noodles and set aside.
- In a bowl, whisk together fish sauce, tamarind paste, brown sugar, lime juice, and chili flakes.
- Heat oil in a skillet over medium heat; scramble the eggs until just set and place on a plate.
- Sauté carrots and bell pepper in the same skillet for about 3-4 minutes until tender but crisp.
- Add zucchini noodles back to the skillet along with scrambled eggs and sauce mixture; toss gently over medium heat for about 2-3 minutes until warmed through.
