  • 2 medium zucchinis (spiralized)
  • 8 oz shrimp (peeled and deveined)
  • 2 large eggs
  • 3 tbsp creamy peanut butter
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp fresh lime juice
  • 3 cloves garlic (minced)
  • 2 green onions (chopped)
  • 1 tsp fish sauce
  • 1 tsp chili flakes

Instructions

  1. Spiralize the zucchinis to create noodles; set aside.
  2. Heat a skillet over medium heat and add a splash of oil. Cook shrimp for about three minutes per side until pink and opaque.
  3. In a bowl, whisk together peanut butter, soy sauce, fish sauce, lime juice, garlic, and chili flakes until smooth.
  4. Push shrimp to one side of the skillet, crack in eggs, scramble until just set, then mix with shrimp.
  5. Add zucchini noodles to the skillet; stir-fry for about two minutes until slightly softened.
  6. Toss in chopped green onions just before serving.
