  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 tbsp low-sodium soy sauce
  • 1 cup low-sodium chicken broth
  • 1 cup long-grain white rice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Sear chicken for about 6 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  2. In the same skillet, sauté chopped onions and minced garlic until translucent (about 3-4 minutes).
  3. Stir in cream of mushroom soup, soy sauce, and chicken broth to create a creamy sauce.
  4. Add rice to the skillet, mixing well to combine. Cover tightly and simmer on low heat for about 20 minutes until all liquid is absorbed.
  5. Return chicken to the pan, spooning sauce over it. Cover again and cook for an additional 10 minutes.
  6. Serve hot, garnished with fresh parsley if desired.
