Instructions
- Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and line with parchment paper.
- In a large bowl, mix flour, sugar, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk eggs and oil; stir in grated carrots and vanilla.
- Combine wet and dry ingredients gently until just mixed.
- Divide batter between prepared pans; bake for 25-30 minutes or until a toothpick comes out clean.
- Cool cakes in pans for 10 minutes before transferring to wire racks to cool completely.
- For frosting, beat cream cheese and powdered sugar until smooth; add vanilla.
