  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup full-fat Greek yogurt
  • 1 medium cucumber, grated and excess water squeezed out
  • 2 garlic cloves, minced
  • 2 tbsp fresh dill or mint, chopped
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 cup diced fresh cucumbers
  • 1 cup diced tomatoes

Instructions

  1. Preheat your grill or skillet over medium heat. Season chicken breasts with salt and pepper.
  2. Grill chicken for about 6-7 minutes on each side until golden brown and fully cooked. Let rest before slicing.
  3. In a bowl, mix Greek yogurt, grated cucumber, minced garlic, chopped herbs, lemon juice, olive oil, salt, and pepper to create the tzatziki sauce.
  4. In a large mixing bowl, combine diced cucumbers and tomatoes.
  5. Slice the grilled chicken and add it to the veggie mix. Drizzle with tzatziki sauce and toss gently until well coated.
  6. Serve immediately on a platter or in individual bowls, garnished with additional herbs if desired.
