- 1 lemon, halved
Instructions
- Preheat the oven to 425°F (220°C).
- Rinse the chicken under cold water and pat dry with paper towels.
- Rub olive oil all over the chicken, then season with salt, pepper, garlic powder, rosemary, and thyme.
- Squeeze the juice from half a lemon over the chicken and place both lemon halves inside the cavity.
- Place the chicken in a roasting pan and roast for about 1 hour and 15 minutes or until it reaches an internal temperature of 165°F (75°C).
- Let the chicken rest for 15-20 minutes before carving.
