Description

Ingredients

  • 1 whole chicken (45 pounds)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 tsp salt (adjust to taste)
  • 0.5 tsp black pepper (adjust to taste)
  • 1 lemon, halved

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat dry with paper towels.
  3. Rub olive oil all over the chicken, then season with salt, pepper, garlic powder, rosemary, and thyme.
  4. Squeeze the juice from half a lemon over the chicken and place both lemon halves inside the cavity.
  5. Place the chicken in a roasting pan and roast for about 1 hour and 15 minutes or until it reaches an internal temperature of 165°F (75°C).
  6. Let the chicken rest for 15-20 minutes before carving.
