- 8 oz fettuccine or penne pasta
- 5 oz garlic and herb Boursin cheese
- 2 tbsp olive oil
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 3 garlic cloves, minced
- Salt and black pepper to taste
Instructions
- 1. Boil the pasta: In a large pot, bring salted water to a rolling boil and cook pasta until al dente according to package instructions.
- 2. Sauté garlic and spinach: In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Then, add the spinach and cook until wilted.
- 3. Create the sauce: Reduce heat, add Boursin cheese, and a splash of reserved pasta water. Stir until smooth.
- 4. Toss everything together: Drain the pasta (reserve some water) and mix it into the sauce until well coated. Adjust consistency with more pasta water if needed.
- 5. Add finishing touches: Sprinkle grated Parmesan on top, season with black pepper, and serve immediately.
