Ingredients

Scale
  • 2 cups fresh cherries, pitted
  • 4 large lemons, juiced (about 1 cup)
  • 1 cup granulated sugar
  • 4 cups filtered water (adjust for strength)
  • Ice cubes

Instructions

  1. Wash and pit the cherries, then blend them until smooth. Strain to remove solids.
  2. Squeeze the lemon halves to extract juice (you’ll need about 1 cup).
  3. In a saucepan over medium heat, combine strained cherry puree, sugar, and 1 cup of water. Stir until the sugar dissolves and let it simmer for about 10 minutes.
  4. In a large pitcher, mix the cherry syrup with lemon juice and remaining cold water based on desired strength.
  5. Chill in the refrigerator for at least an hour before serving over ice. Garnish with mint leaves or lemon slices if desired.
