  • 4 cups fresh arugula (washed and dried)
  • 2 medium navel oranges (peeled and segmented)
  • 1 small red onion (thinly sliced)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon raw honey
  • 1 tablespoon apple cider vinegar
  • Salt and freshly cracked black pepper to taste

Instructions

  1. Wash the arugula thoroughly under cold water and spin dry.
  2. Peel the oranges and segment them by cutting between the membranes.
  3. Thinly slice the red onion; soak in cold water for 10 minutes if desired.
  4. In a small bowl, whisk together olive oil, honey, apple cider vinegar, salt, and pepper.
