Instructions

  1. 1. Cook the orzo: Bring salted water to a boil and cook orzo according to package directions until al dente (about 8 minutes). Drain and rinse under cold water.
  2. 2. Prep the veggies: While orzo cools, chop the cherry tomatoes, cucumber, red onion, bell peppers, basil, and parsley.
  3. 3. Make the vinaigrette: Whisk together lemon juice, olive oil, Dijon mustard, honey (or maple syrup), salt, and pepper in a bowl until emulsified.
