Ingredients

  • 2 cups fresh pineapple chunks (about 1 medium pineapple)
  • 1 cup full-fat coconut milk
  • 2 tablespoons honey or agave syrup (adjust to taste)
  • 2 tablespoons freshly squeezed lime juice

Instructions

  1. Chop the fresh pineapple into chunks and set aside.
  2. In a blender, combine the chopped pineapple, coconut milk, honey (or agave), and lime juice. Blend until smooth.
  3. Taste the mixture and adjust sweetness if needed.
  4. Pour the blended mixture into popsicle molds, leaving space at the top for expansion.
  5. Insert sticks into the molds and freeze for at least 4 hours or overnight.
  6. To unmold, run warm water over the outside of the molds briefly before gently pulling out the popsicles.
