Ingredients

  • 1 cup fresh strawberries, hulled
  • 1 cup fresh blueberries
  • 1 cup full-fat coconut cream
  • 2 tablespoons honey or agave syrup (adjust to taste)
  • 1/4 cup water (divided)

Instructions

  1. Blend strawberries with 1/8 cup of water until smooth. Taste and add honey if desired. Pour into popsicle molds until one-third full.
  2. Freeze for 1-2 hours until set but not solid.
  3. While freezing, mix coconut cream with honey in a bowl until combined. Pour over the strawberry layer until two-thirds full and freeze for another hour.
  4. Blend blueberries with the remaining 1/8 cup of water until smooth. Pour over the coconut layer once set.
  5. Insert sticks and freeze for at least 4-6 hours or overnight for best results.
  6. To remove popsicles, run warm water over the molds briefly before pulling them out.
