  • 2 cups baby spinach
  • 1 medium zucchini (sliced)
  • 1 cup green peas (frozen or fresh)
  • 3 cloves garlic (minced)
  • 4 cups low-sodium vegetable broth
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Wash all vegetables thoroughly. Chop broccoli into small florets and slice zucchini.
  2. In a large pot over medium heat, heat olive oil. Add minced garlic and sauté until fragrant (about 1 minute).
  3. Add chopped broccoli and sliced zucchini; cook until bright green (approximately 3 minutes).
  4. Pour in vegetable broth and add green peas. Bring to a gentle boil, then reduce heat and simmer for 15 minutes until veggies are tender.
  5. Use an immersion blender to puree the soup until smooth or blend half for a chunkier texture.
