- 2 ripe lemons
- 4 garlic cloves
- 2 tbsp fresh thyme
- 2 tbsp fresh rosemary
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
- Zest of 1 lemon
Instructions
- Preheat your oven to 425°F (220°C) and prepare a roasting pan with nonstick spray.
- Pat the chicken dry with paper towels. Rub olive oil all over and season generously with salt and pepper.
- Zest two lemons and combine the zest with chopped garlic, thyme, and rosemary. Stuff this mixture inside the chicken's cavity.
- Slice one lemon into rounds and place on top of the chicken.
- Roast uncovered for about 1 hour 15 minutes or until golden brown and juices run clear when pierced at the thigh.
