  • 1 whole chicken (45 lbs)
  • 2 ripe lemons
  • 4 garlic cloves
  • 2 tbsp fresh thyme
  • 2 tbsp fresh rosemary
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a roasting pan with nonstick spray.
  2. Pat the chicken dry with paper towels. Rub olive oil all over and season generously with salt and pepper.
  3. Zest two lemons and combine the zest with chopped garlic, thyme, and rosemary. Stuff this mixture inside the chicken's cavity.
  4. Slice one lemon into rounds and place on top of the chicken.
  5. Roast uncovered for about 1 hour 15 minutes or until golden brown and juices run clear when pierced at the thigh.
  6. Rest for at least 10 minutes before carving.
