  • 3 pounds chuck roast
  • 4 dried guajillo peppers
  • 2 teaspoons cumin seeds
  • 1 medium onion, chopped
  • 4 garlic cloves, crushed
  • 6 cups beef broth
  • 12 small corn tortillas
  • Fresh cilantro and diced onion for garnish

Instructions

  1. Remove stems and seeds from guajillo peppers; toast them in a dry skillet over medium heat for two minutes.
  2. Blend toasted peppers, cumin seeds, onion, garlic, and one cup of beef broth until smooth.
  3. In a large pot over medium-high heat, brown the chuck roast on all sides.
  4. Pour the pepper marinade over the meat, add remaining beef broth, cover, and simmer on low for about three hours or until tender.
  5. Shred the beef and mix it back into the sauce.
