  • 1 lb beef chuck roast
  • 4 cups beef broth
  • 2 cups fresh ramen noodles
  • 3 tbsp low-sodium soy sauce
  • 3 cloves garlic, minced
  • 1-inch piece ginger, thinly sliced
  • 2 green onions, chopped
  • 1 tbsp miso paste (white or red)
  • 1 tsp sesame oil

Instructions

  1. Cut the beef chuck roast into bite-sized pieces; season with salt and pepper.
  2. In a large pot over medium-high heat, add oil and sear the beef until browned on all sides (about 5 minutes). Remove and set aside.
  3. Add minced garlic and sliced ginger to the pot; sauté until fragrant (about 1 minute).
  4. Pour in beef broth, soy sauce, and miso paste; bring to a simmer.
  5. Return the seared beef to the pot; cover partially and simmer for at least 1 hour.
  6. Cook ramen noodles according to package instructions; drain and set aside.
  7. Taste the broth and adjust seasoning if necessary with more soy sauce or sesame oil.
  8. Assemble bowls with noodles topped by broth and beef; garnish with green onions.
