  • 3 bell peppers (red, yellow, or green)
  • 1 lb boneless, skinless chicken breasts
  • 1 medium onion (diced)
  • 4 cloves garlic (minced)
  • 2 tbsp fajita seasoning
  • 1 can (15 oz) black beans (rinsed)
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • sour cream (optional for serving)

Instructions

  1. Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds.
  2. In a skillet over medium heat, cook diced chicken until golden brown (6-8 minutes). Add onion and garlic; sauté until translucent (about 3 minutes).
  3. Stir in fajita seasoning, black beans, and corn; cook for another 5 minutes.
  4. Fill each pepper with the chicken mixture and place them upright in a baking dish.
  5. Cover with foil and bake for 25 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 5 minutes until melted.
  6. Let cool slightly before serving; top with sour cream if desired.
