- 2 tbsp fajita seasoning
- 1 can (15 oz) black beans (rinsed)
- 1 cup corn (frozen or canned)
- 1 cup shredded cheese (cheddar or Mexican blend)

Instructions
- Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds.
- In a skillet over medium heat, cook diced chicken until golden brown (6-8 minutes). Add onion and garlic; sauté until translucent (about 3 minutes).
- Stir in fajita seasoning, black beans, and corn; cook for another 5 minutes.
- Fill each pepper with the chicken mixture and place them upright in a baking dish.
- Cover with foil and bake for 25 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 5 minutes until melted.
- Let cool slightly before serving; top with sour cream if desired.
