  • 1 lb ground chicken or sausage
  • 1 medium onion, diced
  • 1 cup bell peppers (any color), diced
  • 3 cloves garlic, minced
  • 2 tsp Cajun seasoning (adjust to taste)
  • 2 cups low-sodium chicken broth
  • 2 green onions, sliced (for garnish)
  • 1 tbsp olive oil

Instructions

  1. Heat a large pot over medium heat and add olive oil.
  2. Add the diced onion and bell peppers; sauté until softened, about 5 minutes.
  3. Stir in the ground chicken or sausage and cook until browned, breaking it apart as it cooks.
  4. Add minced garlic and Cajun seasoning; cook for another minute until fragrant.
  5. Stir in the rinsed rice and chicken broth; combine well.
  6. Bring to a boil, then reduce heat to low, cover tightly, and simmer for 20 minutes without lifting the lid.
  7. After cooking, remove from heat but leave covered for an additional 5 minutes. Fluff with a fork before garnishing with green onions.
