- 2 bell peppers, sliced (any color)
- 1 large yellow onion, sliced
- 2 tbsp olive oil
- 2 tbsp taco seasoning
- Juice of 1 lime
- Fresh cilantro (optional), for garnish
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the chicken into thin strips and chop the bell peppers and onion into bite-sized pieces.
- In a large bowl, combine the chicken, bell peppers, and onion. Drizzle with olive oil and sprinkle taco seasoning. Toss until all ingredients are well coated.
- Spread the mixture evenly on the prepared baking sheet.
- Bake for 20-25 minutes or until the chicken is cooked through and vegetables are tender.
- Remove from the oven and squeeze fresh lime juice over the top before serving.
