Ingredients

  • 1 lb boneless, skinless chicken breasts (about 34 pieces)
  • 2 bell peppers, sliced (any color)
  • 1 large yellow onion, sliced
  • 2 tbsp olive oil
  • 2 tbsp taco seasoning
  • Juice of 1 lime
  • Fresh cilantro (optional), for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the chicken into thin strips and chop the bell peppers and onion into bite-sized pieces.
  3. In a large bowl, combine the chicken, bell peppers, and onion. Drizzle with olive oil and sprinkle taco seasoning. Toss until all ingredients are well coated.
  4. Spread the mixture evenly on the prepared baking sheet.
  5. Bake for 20-25 minutes or until the chicken is cooked through and vegetables are tender.
  6. Remove from the oven and squeeze fresh lime juice over the top before serving.
